Holiday Caramels
Making candy in our house during the holidays was a long standing tradition. From the time I was little, I remember the smell of the sugars cooking down on the stove to make the most delicious caramels I had ever tasted. Along with toffee and my Grandma Jackie’s fudge, I couldn’t wait for the mornings my mom would start baking.
This season, I decided to give making caramels a go and start the tradition up again. We made a few mistakes along the way and there were some calls home to my mom, but all in all, they turned out great and will be a sweet gift for family friends and our teachers.
INGREDIENTS:
2 Cups Sugar
3 Cups Whipping Cream
1 Cup Karo Syrup
Candy Thermometer
Waxed Paper
STEP 1: Add the sugar and 1 cup of cream to a 3 quart pot and heat until 180 degrees.
STEP 2: Once the temp has been reached, add the rest of the cream and the cup of karo. Heat until 240 degrees.
STEP 3: Grease an 8x8 pan and pour in the caramels.
STEP 4: Let the pan cool. I put mine in the fridge to help it settle.
STEP 5: While the caramels are cooling, cut small rectangles of waxed paper to roll the caramels in.
STEP 6: Slice the caramels into small pieces and roll them like a little log. Place them into the waxed paper squares, roll the paper around them, and twist the ends to make it look like a Tootsie Roll. We added a little red twine to the ends, but that’s entirely up to you. Once they are all made, grab a jar, or a paper bag, or anything you like to make it feel special and enjoy passing them around!
