Garden Pesto

Having a small kitchen garden is wonderful. I love heading out for fresh mint, herbs, basil, and during the summer months, tomatoes and lettuce. Our basil just popped with the recent heat wave, and nothing sounded better than fresh pesto over zoodles with sliced heirloom tomatoes on top. Are you drooling yet?

Basil Pesto

  • 2 cups basil leaves

  • Juice from 1 lemon

  • 1 small garlic clove

  • 1/4 cup extra-virgin olive oil,

  • 1/2 cup toasted nuts - I used a mix

  • 1/4 cup grated parmesan cheese, optional

  • Salt + Pepper to taste
