Fresh & Easy Greek Salad
I have been on a big Greek food kick for about 6+ months now and love it. Everything feels clean, fresh, healthy and it’s been pretty simple to make. Recently, I tried a simple Greek salad I got sent on the gram and it has quickly become a staple in my rotation for dinner at friends ( don’t worry my Kale Salad is still the mainstay.) With just a few ingredients, I can whip it up in 5 mins and it tastes so good.
Here is what you need: Add however much or little you want! That is the best part!
Romaine Lettuce
Fresh Chopped Dill
Crumbled Feta
Diced Green Onions
For the dressing you need just 3 ingredients: ( disclaimer - I add a splash of white wine vinegar sometimes )
Olive Oil
Fresh Lemon Juice
Salt
Mix all of you greens together and before you add your feta just massage the lettuce a little bit. Toss it all together then whip up your dressing, Make this to taste and modify as needed. When you are ready to serve, toss the dressing in and enjoy!
